Crimini mushrooms are similar in appearance to the Whites because they come from the same fam- ily (Agaricus). Look for a naturally light tan to rich brown cap and a very ferm texture. Deeper, denser, earthier flavor than White mushrooms. Whole and sliced Criminis are gen- erally avail- able in 5 and 10-pound containers. Impreesive in size and appearance, the Porta- bella mushroom is a larger, h- ardier relative of the White and Crimini- s resulting in a deep, meat-like texture and flavor. Whole portabellas (caps with stems) are general- ly available in 5 -pound con- tainers. Portabella caps are available in 3-pound containers. Sliced p- ortabellas are available 3-pound containers.
